What’s my favorite thing to cook?
This one never brought the family running toward the kitchen. It sent them running away from it.

Tripe.

Yes. That tripe.
Cow’s stomach.

Just saying the word was enough to clear a room. I didn’t even have to start cooking it. If anyone caught a hint of what was coming, there’d be exaggerated gag noises, dramatic exits, and a chorus of “That is disgusting” echoing down the hallway.

“Cow’s stomach? EW.

To be fair, I get it. Tripe has a reputation. It doesn’t help that it looks like something you’d normally try to avoid stepping on. And explaining what it is never improves the situation. Ever. That conversation always goes downhill fast.

But once it’s cleaned properly and cooked low and slow, tripe turns into something completely different. It becomes tender, comforting, and loaded with flavor. It absorbs whatever you cook it in and rewards patience. It’s old-world food in the truest sense.

My family never made it past the explanation.

Someone would peek into the pot, freeze, squint, and say, “What… is that?”
I’d answer honestly.
Then they’d disappear.

Doors would close. Windows would open. Errands would suddenly become urgent. I’d be left alone with the pot, stirring, smiling, completely unfazed.

And here’s the part that really makes me laugh: while everyone was acting like I’d brought home a biohazard, I was cooking one of the healthiest things you can eat.

Tripe is high in protein, low in fat, rich in B-vitamins, iron, zinc, and collagen. It’s easy on digestion, deeply nourishing, and exactly the kind of food older generations relied on long before supplements came in bottles. This is real food—nutrient-dense, filling, and honest.

So while the rest of the house scattered like I’d announced a small kitchen emergency, I’d sit down afterward with a bowl, perfectly content.

Sometimes the food you love isn’t about who joins you at the table.
Sometimes it’s about knowing exactly what you’re eating…
and knowing it’s good for you—even if everyone else says “ew.”
